Vinification technique
The grapes are harvested by hand towards the end of September. The grapes are placed in small boxes holding approximately 15 kg each. The boxes are then taken to the terrace situated above the cellar, where the grapes are gently, mechanically removed from the stem and pressed with the resulting must dropping directly into concrete containers (capacity 110 hectolitres) below in the cellar. Fermentation takes place within a controlled temperature environment of no more than 28-30 °C. After 10 days the liquid is separated from the skins and placed into concrete containers where the malolactic fermentation takes place.

Refining technique
The wine lies for 12 months in the concrete containers. During this time we decant it several times in order to remove the dregs.
