HEIGHT AND EXPOSURE:Hills of 350/380 m. a.s.l., facing west.
TYPE OF SOIL: Calcareous and clay with excellent mineral balance.
TRAINING SYSTEM: Forty-year old vineyards Guyot -trained with a density of 7000 plants/he, with yield of 1 kg/ plant.
HARVEST: Manually with boxes.
TIME OF HARVESTING: From the middle to the end of August.
Ageing:100% of the wines that make this Cuvée ferments and matures in small, brand new oak
casks for 12 months. The wine is then rested for at least 48 months on the yeasts and after the disgorgement for further 6 months in the bottle.
REMUAGE: Manual riddling of 24 days.
SERVING NOTES: Serve in crystal flutes at 6-8°C.
