Frascole Chianti Rufina DOCG
Produced in the Chianti Rufina region of Tuscany using mainly Sangiovese grapes along with a small amount of Canaiolo and Colorino. The nose is quite delicate, discreet and subtle with a silky palate and a firm tannic note on the finish.
Description of the vineyards: The soil composition is a clay loam originated by the geological formation called "Marl of Vicchio" (marl and clay marl)

Plants density: old vineyards 2800 plants per hectare ; new vineyards 5000 plants per hectare

Clones: In the new ones there is Sangiovese F9, CH 22
Vinification tecnique: The vine-harvest (completely done by hand) usually starts in earlyOctober. We put the grapes in small boxes that weigh about 15 kg each. We take the boxes to a terrace situated over the cellar where there is the destemmer, a particular machine, that at first divides the grapes from the grape-stalk and immediately presses them.
The must enters directly by gravity into the cellar’s inox containers (capacity 50 hectoliters) through some openings situated on the terrace. Fermentationtakes place in the inox containers at controlled temperatures (not more than 28° -3 0°). The liquid and the skins are in contact for 12-18 days then they are divided
Refining technique: the wine is transfered half into the concrete containers and half into the barriques where the malolactic fermentation takes place
The barriques are made of french oak and their capacity is 225 litres and 5 hectolitres. The wine refines in the barriques for about 10 months
